A simple, flavorful potato fry curry made with common spices and basic ingredients. This dry curry highlights the taste of potatoes tempered with mustard and cumin seeds, perfect as a side dish.

Steps

1. Heat oil in a pan over medium heat. 2. Add mustard seeds; when they start to splutter, add cumin seeds. 3. Add sliced onions and sauté until golden brown. 4. Add diced potatoes and stir well. 5. Sprinkle turmeric, red chili powder, coriander powder, and salt. 6. Mix everything, cover the pan, and cook on low heat for 10-12 minutes, stirring occasionally to avoid sticking. 7. Once potatoes are cooked and slightly crispy, remove from heat. 8. Serve hot as a side dish or with rice/chapati.
