Steps

1. Cook the white rice according to package instructions and set aside. 2. Heat olive oil in a pan over medium heat. 3. Add the beef mince to the pan, breaking it apart with a spoon. 4. Season with smoked paprika, ground cumin, salt, and pepper. 5. Cook the beef mince until browned and cooked through, about 7-8 minutes. 6. While the beef cooks, prepare the vegetables: dice the bell pepper, cucumber, and tomato; grate the carrot. 7. In a large bowl, combine the cooked rice, rocket leaves, and prepared vegetables. 8. Add the cooked beef mince on top. 9. Squeeze lime juice over the bowl and gently toss to combine all ingredients. 10. Adjust seasoning if needed and serve immediately.
