Steps

1. Heat vegetable oil in a pan over medium heat. 2. Add diced onion and minced garlic, sauté until fragrant. 3. Add diced chicken breast, season with curry powder, salt, and pepper. 4. Cook until chicken is browned. 5. Pour in coconut milk and add sliced bell pepper. 6. Simmer for 10-15 minutes until chicken is cooked through and the sauce thickens. 7. Serve hot over rice or with naan bread.
