Steps

1. Rinse the jasmine rice under cold water until the water runs clear. 2. In a small saucepan, combine the rinsed rice, coconut milk, water, lime zest, and a pinch of salt. Bring to a boil. 3. Once boiling, reduce to a simmer, cover, and cook for about 15 minutes until the rice is tender and the liquid is absorbed. 4. While the rice is cooking, heat the olive oil in a skillet over medium heat. Season the shrimp with salt and pepper. 5. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they are pink and opaque. 6. Once the rice is done, fluff it with a fork, then stir in lime juice. 7.
