This creamy coconut chicken curry is a delightful blend of spices and coconut milk, perfect for a comforting meal. With tender chicken simmered in a rich sauce, it’s both satisfying and easy to make.

Steps

1. Heat the vegetable oil in a pan over medium heat. 2. Add the chopped onion and sauté until translucent. 3. Stir in the minced garlic and grated ginger, cooking for another minute. 4. Add the diced chicken and curry powder, cooking until the chicken is browned. 5. Pour in the coconut milk and bring to a simmer. 6. Reduce heat and let it cook for 15 minutes until the chicken is cooked through and the sauce thickens. 7. Season with salt to taste and garnish with fresh cilantro. 8. Serve hot over cooked rice.
