1. Slice the chicken breast horizontally to create two thin cutlets. 2. Season both sides of the chicken cutlets with salt and pepper. 3. Place the flour, beaten egg, and breadcrumbs each in separate shallow bowls. 4. Dredge each cutlet first in flour, shaking off excess. 5. Dip the cutlet into the beaten egg, then coat with breadcrumbs. 6. Heat oil in a skillet over medium heat. 7. Cook the cutlets for 3-4 minutes on each side, or until golden brown and cooked through. 8. Remove from skillet and place on paper towels to drain excess oil. 9.
