1. Heat the vegetable oil in a non-stick skillet over medium heat. 2. In the same skillet, briefly warm the corn tortillas for about 30 seconds on each side until pliable. 5. To assemble, place the warmed beans on a plate, top with the fried egg, and serve with the warm tortillas on the side. 6. Garnish with fresh cilantro and serve with salsa if desired.
