Garlic Jaggery Glazed Potatoes

Steps

1. Heat the cooking oil in a pan over medium heat. 2. Add cumin seeds and let them sizzle for a few seconds. 3. Add the minced garlic and sauté until golden brown. 4. Add the diced potatoes, turmeric powder, and salt. Stir well to coat the potatoes. 5. Cover the pan and cook for about 10 minutes, stirring occasionally, until the potatoes are tender. 6. Once the potatoes are cooked through, add the grated jaggery and stir well. 7. Cook for another 2-3 minutes until the jaggery melts and coats the potatoes nicely. 8. Garnish with fresh coriander and serve hot.
