Herb-Roasted Chicken Breast with Crispy Potatoes

Steps

1. Preheat the oven to 200°C (400°F). 2. Wash and dice the potato into small cubes. Toss with half the olive oil, salt, and pepper. 3. Place the potatoes on a baking tray and roast for 20 minutes. 4. Meanwhile, rub the chicken breast with the remaining olive oil, minced garlic, rosemary, thyme, salt, and pepper. 5. After the potatoes have roasted for 20 minutes, move them to one side of the tray and place the chicken breast on the other side. 6. Roast everything together for an additional 20-25 minutes, or until the chicken is cooked through and potatoes are crispy. 7. Remove from oven and let the chicken rest for 5 minutes. 8. Serve with a squeeze of lemon juice if desired.
