1. Preheat your oven to 375°F (190°C). 2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, lemon juice, salt, and pepper. 3. Rub the herb mixture all over the rabbit leg, ensuring it’s well coated. 4. In a baking dish, place the sliced carrot and diced potato, then lay the rabbit leg on top. 5. Cover the dish with aluminum foil and roast in the oven for 30 minutes. 6. Remove the foil and roast for an additional 15 minutes, or until the rabbit is cooked through and golden brown. 7.
