1. Preheat your oven to 375°F (190°C). 2. In a bowl, mix minced garlic, honey, soy sauce, lemon juice, lemon zest, salt, and pepper to create a marinade. 3. Rub the marinade all over the pork loin, ensuring it's well-coated. Let it marinate for at least 30 minutes. 4. In an oven-safe skillet, heat olive oil over medium heat. Add sliced onions and green peppers, sautéing until they soften. 5. Push the vegetables to the side and place the marinated pork loin in the skillet. 6. Sear the pork on all sides until golden brown (about 2-3 minutes per side). 7. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature reaches 145°F (63°C). 8. Remove from the oven and let rest for 5 minutes before slicing. Serve with sautéed vegetables on the side.
