1. In a small bowl, combine olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper. 2. Rub the marinade all over the chicken thigh and let it sit for at least 15 minutes. 3. Heat a skillet over medium heat. 4. Place the chicken thigh skin-side down in the skillet and cook for 6-7 minutes until the skin is crispy and golden. 5. Flip the chicken and cook for another 5-6 minutes until cooked through and juices run clear. 6. Remove from heat and let rest for 3 minutes before serving.
