Lemon Herb Roasted Chicken

Steps

1. Preheat the oven to 200°C. 2. Rinse the chicken and pat it dry with paper towels. 3. Cut one lemon into slices and stuff them inside the chicken cavity, along with the garlic cloves. 4. In a small bowl, combine the olive oil, thyme, rosemary, salt, and pepper. 5. Rub this mixture all over the chicken, ensuring it is evenly coated. 6. Cut the remaining lemon into slices and place them on top of the chicken. 7. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour, or until the internal temperature of the chicken reaches 75°C. 8. Remove the chicken from the oven and let it rest for 10 minutes before carving. 9. Serve the lemon herb roasted chicken with your favorite side dishes.
