Loaded Chicken and Black Bean Burrito

Steps

1. Marinate the chicken strips in soy sauce, salt, and pepper for around 10 minutes. 2. Heat olive oil in a pan, then add the black beans (drained) along with some water. When the beans start to boil, mash or puree them with a hand blender or masher. 3. In a separate pan, fry the marinated chicken strips until they turn golden brown. 4. In a larger pan, start heating one wheat tortilla. Flip it before it burns and spread some bean puree on it. 5. Add the cooked chicken, sweet corn, guacamole, cheese, and chopped coriander on top of the bean puree. 6. Once the cheese melts, add some sour cream on top, then fold the burrito tightly to serve.
