Pan-Fried Tilapia with Boiled Potatoes and Spinach

Steps

1. Preheat a non-stick pan over medium heat with a drizzle of olive oil. 2. Lightly season the tilapia with salt and pepper. 3. Place the fish in the pan and cook for about 5 minutes on each side until cooked through. 4. Meanwhile, boil the potato pieces in a pot of salted water for about 8 minutes until soft. 5. Once the potatoes are cooked, add the spinach to the boiling water, stirring to combine. Allow to cook for a minute before draining. 6. To serve, plate the cooked tilapia, potatoes and spinach. Garnish with parsley.
