Persian Saffron Chicken and Egg Skillet

Steps

1. In a small bowl, soak the saffron threads in 1 tbsp of warm water for about 10 minutes. 2. Heat olive oil in a skillet over medium heat and sauté the chopped onion until translucent. 3. Add the minced garlic and diced chicken to the skillet, cooking until the chicken is browned and cooked through, about 7-10 minutes. 4. Stir in the turmeric, salt, and pepper, and then pour in the saffron mixture. 5. Crack the egg into the skillet and cover, cooking until the egg whites are set but the yolk is still runny, about 3-5 minutes. 6. Garnish with fresh parsley and serve hot.
