Steps

1. Rinse and drain the chickpeas. 2. Chop the red onion, cucumber, red bell pepper, cherry tomatoes, and olives. 3. In a large bowl, combine the chickpeas, vegetables, and olives. 4. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper. 5. Pour the dressing over the salad and toss to combine. 6. Garnish with fresh parsley before serving.
