Roasted Catfish with Herbs and Lemon

Steps

1. Preheat the oven to 200°C (400°F). 2. Rinse the catfish fillet and pat dry with paper towels. 3. In a small bowl, mix olive oil, thyme, rosemary, minced garlic, salt, and pepper. 4. Brush the seasoning mixture over the catfish fillet evenly. 5. Place the fillet on a baking tray lined with parchment paper. 6. Arrange lemon slices on top of the fillet. 7. Roast in the oven for 15-20 minutes, or until the fish flakes easily with a fork. 8. Remove from oven, let it rest for 2 minutes, then serve warm.
