1. Heat olive oil in a pot over medium heat. 2. Add beef cubes, season with salt and pepper, and brown on all sides. 3. Add onion and garlic; sauté until translucent. 4. Stir in tomato paste and cook for 1 minute. 5. Add carrot, potato, beef broth, thyme, and bay leaf. 6. Bring to a boil, then reduce heat and simmer for 45 minutes until beef is tender. 7.
