Sautéed Chicken Breast with Zucchini, Yellow Squash, and Mushrooms

A healthy and flavorful dish featuring tender chicken breast sautéed with fresh zucchini, yellow neck squash, mushrooms, and onions for a colorful, nutrient-packed meal.

Steps

1. Season the chicken breast with salt, pepper, and dried thyme. 2. Heat olive oil in a skillet over medium heat. 3. Add the chicken breast and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside. 4. In the same skillet, add the onion and garlic and sauté for 1-2 minutes until fragrant. 5. Add mushrooms, zucchini, and yellow squash. Cook for about 5-7 minutes until vegetables are tender and lightly browned. 6. Return the chicken breast to the skillet to warm through for 1-2 minutes. 7. Adjust seasoning with salt and pepper as needed. 8. Serve on a plate, optionally garnish with fresh parsley.
