Smoked Duck Ravioli with Green Curry Paste

Steps

1. In a bowl, combine chopped smoked duck, ricotta cheese, egg yolk, salt, and pepper to make the ravioli filling. 2. Lay out the fresh pasta sheets and place teaspoons of filling spaced evenly. 3. Moisten edges around the filling with water, cover with another pasta sheet, and press around each mound to seal. 4. Cut into individual ravioli and set aside. 5. Bring a pot of salted water to a boil and cook ravioli for 3-4 minutes until they float. 6. Meanwhile, heat vegetable oil in a pan and sauté shallot until translucent. 7. Add green curry paste and cook for 1 minute, then stir in coconut milk, fish sauce, and lime juice. 8. Simmer the sauce gently for 3-4 minutes until slightly thickened. 9. Drain ravioli and toss gently in the green curry sauce. 10. Serve garnished with fresh basil leaves.
