Steps

1. Heat olive oil in a skillet over medium heat. 2. Add diced potatoes and cook until golden brown and crispy, about 5-7 minutes. 3. Add black beans, corn, and cooked rice to the skillet. Stir well to combine. 4. Sprinkle cumin, chili powder, salt, and pepper over the mixture. Stir again to evenly distribute the spices. 5. Create two small wells in the mixture and crack the eggs into them. 6. Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your desired doneness. 7. Remove from heat and serve hot.
