Steps

1. Peel and dice the potato into small cubes. 2. Parboil the potato cubes in boiling water for 5 minutes, then drain and pat dry. 3. Heat vegetable oil in a non-stick pan over medium heat. 4. Add the potato cubes and cook until golden and crispy on all sides, about 10 minutes. 5. In a small bowl, mix soy sauce and sugar until sugar dissolves. 6. Pour the soy sauce mixture over the crispy potatoes, stirring to coat evenly. 7. Cook for another 2 minutes until the sauce thickens slightly. 8. Season with a pinch of salt and black pepper. 9. Garnish with chopped green onion if desired and serve hot.
