Steps
1. Cook the egg noodles according to package instructions until al dente. Drain and set aside.
2. Heat 1 tablespoon vegetable oil in a wok or large pan over medium-high heat. Add the noodles and stir-fry until slightly crispy, about 3-4 minutes.

5. In another pan, fry the egg sunny side up until the whites are set but yolk remains runny.
6. Arrange the fried noodles on a plate, top with sliced scallions, fried sunny side egg, and mortadella slices.
7. Serve the fried royal shrimp on the side.
