In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, oil, and salt to create the marinade. Cut the paneer into cubes and add to the marinade, ensuring each piece is well-coated. Add the diced bell pepper and onion to the marinade and mix gently. Cover and let it marinate for at least 30 minutes. Preheat the grill or oven to medium-high heat. Thread the marinated paneer, bell pepper, and onion onto skewers alternately. Grill the skewers for about 10-12 minutes, turning occasionally until they are golden and slightly charred. Serve hot with mint chutney or yogurt dip.
