Steps

1. Heat vegetable oil in a non-stick pan over medium heat. 2. Add the mixed vegetables and stir-fry for 2-3 minutes until tender. 3. Push the vegetables to the side of the pan and crack the egg into the center. Scramble the egg until fully cooked. 4. Add the cold rice to the pan, breaking up any clumps. Mix everything together. 5. Pour in the soy sauce and sesame oil, stirring well to combine. Season with salt and pepper. 6. Stir in the chopped green onion and cook for another minute. 7.
