Hearty Macaroni Vegetable Bake

A comforting baked macaroni dish loaded with fresh tomatoes, onion, green pepper, potatoes, cabbage, and topped with melted cheese. Perfect for a wholesome and flavorful meal.

Steps

1. Preheat the oven to 180°C (350°F). 2. Boil the macaroni in salted water until al dente, about 7 minutes. Drain and set aside. 3. In a pan, heat olive oil over medium heat. Add the diced potatoes and cook until slightly tender, about 5 minutes. 4. Add the onion, green pepper, and cabbage to the pan. Sauté for another 5 minutes until vegetables soften. 5. Stir in the diced tomatoes, oregano, salt, and black pepper. Cook for 3 more minutes. 6. Combine the cooked macaroni with the sautéed vegetables and mix well. 7. Transfer the mixture to a small baking dish. Sprinkle the shredded cheese evenly on top. 8. Bake in the preheated oven for 15 minutes or until the cheese is melted and golden. 9. Remove from oven, let cool slightly, then serve warm.
