Crispy on the outside and tender on the inside, these herbed garlic roasted potatoes make a perfect comforting main dish. Infused with fresh herbs and garlic, they are both flavorful and satisfying.

Steps

1. Preheat your oven to 400°F (200°C). 2. Wash and dice the potatoes into 1-inch cubes. 3. In a bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, and pepper. 4. Spread the potatoes evenly on a baking sheet lined with parchment paper. 5. Roast in the oven for 30-35 minutes, turning halfway through, until golden and crispy. 6. Remove from oven and garnish with fresh parsley before serving.
