Honey-Glazed Carrot and Chickpea Stir-Fry

Steps

1. Heat olive oil in a skillet over medium heat. 2. Add minced garlic and sauté for 1 minute until fragrant. 3. Add sliced carrots and cook for 5-7 minutes until tender but still crisp. 4. Stir in cooked chickpeas and cook for 2 minutes to warm through. 5. In a small bowl, mix honey and soy sauce, then pour over the carrot and chickpea mixture. 6. Stir well to coat everything evenly and cook for another 2 minutes. 7. Season with salt and pepper to taste. 8. Remove from heat and garnish with fresh parsley if desired. 9. Serve immediately.
