Steps

1. Heat olive oil in a medium skillet over medium heat. 2. Add minced garlic and grated ginger; sauté for about 1 minute until fragrant. 3. Add sliced carrots and stir-fry for 5-7 minutes until they start to soften. 4. Stir in chickpeas and cook for another 3 minutes. 5. Mix honey and soy sauce in a small bowl, then pour over the veggies and chickpeas. 6. Stir well to coat everything evenly, cooking for another 2 minutes until the glaze thickens slightly. 7. Season with salt and pepper to taste. 8. Sprinkle sesame seeds and garnish with fresh parsley or cilantro before serving.
