Steps

1. Preheat oven to 180°C (350°F). 2. Place salmon on a baking tray, drizzle with olive oil, lemon juice, salt, and pepper. 3. Bake salmon for 12-15 minutes until cooked through. 4. Meanwhile, cook quinoa according to package instructions. 5. In a bowl, combine cooked quinoa, baby spinach, and pumpkin seeds. 6. Flake the cooked salmon over the quinoa mixture. 7. Top with sliced avocado. 8. Gently toss all ingredients together and serve warm.
