Steps

1. Preheat your oven to 375°F (190°C). 2. Butterfly the chicken breast by slicing it horizontally without cutting all the way through. 3. Season the inside and outside of the chicken with salt, pepper, and garlic powder. 4. Spread the cream cheese evenly inside the butterflied chicken. 5. Place the pickle slices over the cream cheese. 6. Fold the chicken breast back together and secure with toothpicks. 7. Heat olive oil in an oven-safe skillet over medium heat. 8. Sear the chicken breast for 3 minutes on each side until golden brown. 9. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken is fully cooked (internal temperature 165°F/74°C). 10. Remove toothpicks, garnish with fresh parsley if desired, and serve hot.
