Pineapple Stuffed Pepper

This simple and delicious dish is perfect for a light lunch or dinner. Stuffed peppers are filled with delicious pineapple and feta cheese, and topped with a tangy garlic sauce.

Steps

1. Preheat oven to 350 degrees F (175 degrees C). 2. Cut the pepper in half lengthwise and remove the core and seeds. 3. Place halves into a baking dish and fill with feta cheese and pineapple bits. 4. Bake in preheated oven for about 20 minutes, until the pepper is tender. 5. In a small bowl, mash garlic clove with salt and pepper. Stir in olive oil and white wine vinegar. 6. Drizzle the garlic sauce over the pepper and pineapple stuffing. 7. Bake for an additional 5 minutes. Serve warm.
