Steps

1. Heat oil in a pan over medium heat. 2. Add chopped onion, garlic, and ginger; sauté until fragrant and translucent. 3. Stir in curry powder and cook for 1 minute. 4. Add diced chicken and cook until browned on all sides. 5. Pour in coconut milk and water, stir well. 6. Simmer for 10 minutes or until chicken is cooked through and sauce thickens. 7. Season with salt to taste. 8. Garnish with fresh coriander and serve hot with rice or bread.
