Steps
1. Preheat oven to 375°F (190°C).
2. Slice the chicken breast horizontally to create a pocket, being careful not to cut all the way through.
3. Dice the tomato and finely chop the basil leaves.
4. In a small bowl, mix the diced tomato, basil, minced garlic, olive oil, salt, and pepper.
5. Stuff the tomato mixture into the chicken breast pocket.
6. Sprinkle grated Parmesan cheese over the stuffed chicken.
7. Place the chicken breast in a baking dish and bake for 25-30 minutes, or until cooked through.
8. Remove from oven and let rest for 5 minutes before serving.
