Start your day with a nutritious and flavorful bowl of Vegetable Poha, a classic Indian breakfast made with flattened rice. Packed with veggies and spices, it's light yet filling, perfect for a healthy morning boost.

Steps

1. Rinse the flattened rice (poha) under cold water and set aside to drain. 2. Heat oil in a pan over medium heat. Add mustard seeds and allow them to splutter. 3. Add chopped onions and green chili, sauté until onions are translucent. 4. Stir in mixed vegetables and cook for 3-4 minutes until they're tender. 5. Add turmeric powder and salt, followed by the drained poha. Mix gently to combine. 6. Cook for another 2-3 minutes, stirring occasionally, until the poha is heated through. 7. Garnish with fresh coriander leaves and serve with a lemon wedge if desired.
