1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture. 2. In a mixing bowl, combine the grated zucchini, chopped onion, garlic, and egg. Mix well. 3. Add the breadcrumbs, salt, and pepper to the mixture, stirring until fully combined. 4. Heat olive oil in a frying pan over medium heat. 5. Form small patties from the mixture and place them in the hot oil. 6. Fry the patties for about 3-4 minutes on each side or until golden brown. 7. Remove from the pan and place on a paper towel to absorb excess oil. 8. Serve warm, optionally with a yogurt dip or sauce of your choice.
