Steps

1. Heat olive oil in a skillet over medium heat. 2. Season the chicken thigh with salt, pepper, and paprika. Add it to the skillet, skin side down, and sear until golden brown (about 5 minutes). 3. Flip the chicken and add the diced onion and minced garlic. Sauté for 2 minutes until fragrant. 4. Pour in the beer and chicken broth, and add fresh thyme. Bring to a simmer. 5. Cover and reduce heat to low. Let it braise for about 25 minutes, or until the chicken is cooked through and tender. 6. Remove the chicken and let it rest.
