Steps
1. Heat olive oil in a heavy-bottomed pan over medium heat.
2. Season the brisket with salt and pepper, then sear on all sides until browned. Remove and set aside.
3. In the same pan, add onion and garlic, sauté until translucent.
4. Stir in tomato paste, then add diced carrot and parsnip. Cook for 3 minutes.
5. Return brisket to the pan, add beef broth, thyme, and bay leaf.
6. Bring to a simmer, then cover and reduce heat to low.
7. Braise gently for 2 hours, or until brisket is tender.
8. Remove the brisket and vegetables, strain the sauce if desired and serve together.
