Steps
1. Heat olive oil in a pan over medium heat. Add sliced chorizo and cook until slightly crispy, about 4 minutes.
2. Add the sliced green onions to the pan and sauté for 2 minutes until softened.
3. Stir in smoked paprika, salt, and pepper, mixing well. Remove from heat.
4. In a small bowl, mix sour cream and lime juice to make the lime crema.
5. Warm the tortilla in a dry pan or microwave until pliable.
6. Spread the lime crema over the tortilla evenly.
7. Layer the chorizo and green onion mixture along the center of the tortilla.
8. Sprinkle shredded cheese on top.
9. Carefully roll the tortilla into a tight log, then slice into 3-4 bite-sized roll-ups.
10. Serve immediately with extra lime crema for dipping if desired.
