Classic Nigerian Jollof Rice

Experience the vibrant flavors of Nigeria with this classic Jollof Rice recipe. This one-pot dish features fragrant rice cooked in a spicy tomato sauce, making it a favorite at gatherings and celebrations.

Steps

1. Rinse the rice under cold water until the water runs clear, then soak in water for 30 minutes. 2. In a pot, heat the vegetable oil over medium heat and sauté the chopped onions until translucent. 3. Add the minced garlic and grated ginger, cooking for another minute until fragrant. 4. Stir in the tomato paste, chopped bell pepper, thyme, curry powder, paprika, cayenne pepper, and salt. Cook for about 5 minutes until the mixture thickens. 5. Add the soaked rice to the pot, stirring well to coat the rice in the tomato mixture. 6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is cooked and the liquid is absorbed. 7. Fluff the rice with a fork and stir in peas or diced vegetables if desired. Serve hot.
