1. Preheat the oven to 400°F (200°C). 2. Toss the diced potatoes with 1 tablespoon of olive oil, salt, and pepper. 3. Spread the potatoes on a baking sheet and roast in the oven for 20 minutes. 4. While the potatoes are roasting, prepare the salmon by mixing the remaining olive oil, oregano, garlic powder, salt, and pepper in a small bowl. 5. Rub the herb mixture evenly over the salmon fillet. 6. After 20 minutes, remove the baking sheet from the oven, push the potatoes to one side, and place the salmon on the other side. 7. Return to the oven and roast for an additional 12-15 minutes, until the salmon is cooked through and the potatoes are golden brown. 8.
