Herb-Crusted Lamb Chops with Garlic Mashed Potatoes

Steps

1. Preheat the oven to 400°F (200°C). 2. Peel and cube the potato, then boil in salted water until tender (about 15 minutes). 3. In a small bowl, mix chopped rosemary, thyme, minced garlic, olive oil, salt, and pepper. 4. Rub the herb mixture evenly over the lamb chop. 5. Heat a skillet over medium-high heat and sear the lamb chop for 2 minutes on each side. 6. Transfer the skillet to the oven and roast the lamb for 6-8 minutes for medium-rare. 7. Drain the potatoes and mash with roasted garlic, milk, and butter until smooth. Season with salt and pepper. 8. Let the lamb rest for 5 minutes before serving alongside the garlic mashed potatoes.
