Steps

1. In a mixing bowl, combine olive oil, thyme, rosemary, minced garlic, salt, and pepper. 2. Add the turkey medallions to the bowl and marinate for at least 15 minutes. 3. While the turkey marinates, boil the potatoes in salted water until fork-tender, about 15 minutes. 4. Drain the potatoes and return them to the pot. Mash with milk, butter, and minced garlic until creamy. Season with salt and pepper to taste. 5. Heat a skillet over medium heat and cook the marinated turkey medallions for about 4-5 minutes on each side until cooked through. 6. Serve the turkey medallions alongside the garlic mashed potatoes, garnished with fresh parsley if desired.
