Savory Potato Jelly with Herbs

This unique savory potato jelly is a delightful and innovative twist on traditional jellies. Infused with fresh herbs and spices, it's perfect as a side dish or a sophisticated addition to your charcuterie board.

Steps

1. Peel the potato and chop it into small cubes. 2. In a pot, boil the potato cubes in vegetable broth until tender, about 15 minutes. 3. Drain the potatoes, reserving the cooking liquid. Blend the potatoes with a little bit of the broth until smooth. 4. In a separate pot, combine the remaining broth with agar-agar powder and bring to a boil over medium heat, stirring continuously. 5. Once boiling, add the blended potato mixture and stir well. 6. Add chopped parsley, chives, salt, pepper, and lemon juice if using. Mix until fully incorporated. 7. Pour the mixture into a mold or dish and refrigerate for at least 2 hours until set. 8. Once set, slice and serve as a savory jelly dish or alongside meats and cheeses.
