1. Cut the eggplant into small cubes and boil in water until tender. 2. Drain the eggplant and finely chop it. 3. In a mixing bowl, combine the chopped eggplant with onion, garlic, chives, parsley, rice flour, and tapioca flour. 4. Add soy sauce to taste and mix well. 5. Refrigerate the mixture for at least 1 hour to allow it to firm up. 6. Wet your hands and shape the mixture into small meatballs. 7. Place the meatballs in the AirFryer and cook at 180°C (356°F) for 12 minutes. 8. Serve with your favorite dipping sauce.
