Stuffed Peppers

This traditional Italian dish is light, full of flavor and easily customizable. Filled with fresh vegetables and seasoned to perfection, these stuffed peppers are a delicious and nutrient-dense meal.

Steps

1. Preheat oven to 400°F and line a baking sheet with parchment paper. 2. Cut the pepper in half and remove the seeds and ribs. 3. In a medium bowl, mix together the cooked quinoa, grated carrot, chopped mushrooms, tomatoes, olive oil, salt, and oregano. 4. Stuff the peppers with the quinoa mixture and place them on the prepared baking sheet. 5. Bake for 20 minutes or until the peppers are tender. 6. (Optional) Top with vegan cheese and bake for another 5 minutes. 7. Serve and enjoy.
