Steps

1. Boil the diced golden sweet potato in water with a pinch of salt until very soft (about 15 minutes). 2. Drain the sweet potato and blend it into a smooth puree. Set aside to cool. 3. Prepare the sour plum soup chilled in the refrigerator. 4. Add simple syrup to the sour plum soup and stir well to taste. 5. Fill a tall glass halfway with ice cubes. 6. Spoon the sweet potato puree gently into the glass. 7. Slowly pour the iced sour plum soup over the puree, creating a layered effect. 8. Garnish the top with fresh sour plums and mint leaves. 9.
