Steps
1. Bring a small pot of water to a gentle boil.
2. Carefully lower the egg into boiling water and cook for 6 minutes for a soft-boiled consistency.
3. While the egg cooks, toast the bread slice until golden brown.
4. In a small bowl, mash the avocado with salt, pepper, and olive oil.
5. Spread the mashed avocado evenly on the toasted bread.
6. Remove the egg from boiling water and place it in cold water to stop cooking.
7. Peel the egg gently and slice it in half.
8. Place the egg halves on top of the avocado toast.
9. Sprinkle chopped chives and parsley over the egg.
10. Season with additional salt and pepper if desired and serve immediately.
