Herb-Crusted Rack of Lamb with Mint Yogurt Sauce

A succulent rack of lamb coated with fresh herbs and garlic, roasted to perfection and served with a refreshing mint yogurt sauce that complements the rich flavors.

Steps

1. Preheat the oven to 200°C (400°F). 2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, salt, and pepper. 3. Rub this herb mixture all over the rack of lamb. 4. Place the lamb on a roasting pan and roast for 20-25 minutes for medium-rare, or adjust time to your preferred doneness. 5. While lamb is roasting, combine Greek yogurt, chopped mint, and lemon juice in a small bowl; mix well and refrigerate. 6. Remove the lamb from the oven and let it rest for 5-10 minutes before slicing. 7. Slice the rack into individual chops and serve with the mint yogurt sauce on the side.
